Main Meals Recipes
These are a few of my favourite recipes, a couple of them take a little time so I tend to reserve them for the weekend when I have a bit more time in the kitchen.
All of my recipes are for 4 people or 2 with enough left over for lunch. I always make more than I need because that way I know we’ll have healthy lunch the next day. Soups, curries, and stews always taste better the next day too!
“This Tarka Dhal isn’t the quickest recipe but its super easy and really cheap to make if you have a selection of spices ready to use. You normally see this on menus as a side dish but I think it deserves to be a main!”
“Singapore Noodles was something I would always order if we went out for a Chinese but it normally comes with pork and prawns which just don’t float my boat anymore, If you want to give it a protein boost you can add a couple of eggs – Just whisk them up, push the cooked veg to one side of the pan and let them scramble.”
“ Lentil Bolognese is a favourite in our house and is my go to comfort food. I always tend to use brown rice pasta because I don’t get that horrible bloated feeling that I get with white pasta. Lentils are high in fibre and full of good protein ”
“I love this combination. It’s really filling and a big wooden chopping board with lots of colourful bruschetta on looks really nice in the middle of the table. The bruschetta makes a great snack too.”
